You’ll Need:

4 mugs coarsely destroyed rotisserie chicken 

1 (15-ounce) can dark beans, depleted and flushed 

1/2 glass slashed new cilantro leaves 

1 (8-ounce) bundle destroyed Mexican mix cheddar, partitioned 

8 to 10 (8-inch) flour tortillas, warmed 

FOR THE ENCHILADA SAUCE 

1 tablespoon canola oil 

1 medium sweet onion, cleaved 

1 little poblano pepper, diced 

4 cloves garlic, minced 

1 tablespoon bean stew powder 

1 teaspoon ground cumin 

1 teaspoon smoked paprika 

1 teaspoon dried oregano 

1 glass chicken stock 

1 (15-ounce) would tomato be able to sauce 


How to Make:


  1. Preheat broiler to 375 degrees F. Softly oil a 9 x 13 preparing dish or coat with nonstick splash. 
  2. To make the enchilada sauce, warm canola oil in an extensive skillet over medium warmth. Include onion and poblano, and cook, mixing as often as possible, until delicate, around 3-4 minutes. Blend in garlic, stew powder, cumin, paprika and oregano until fragrant, around 1 minute.
