You’ll Need:

230 grams (1 glass/2 sticks) unsalted margarine, slashed

300 grams (2 mugs) white chocolate

200 grams (1 container) caster sugar

240 ml (1 container) Unique Almond Breeze Milk

2 substantial eggs

2 teaspoons vanilla concentrate

350 grams (2 and 1/2 mugs) plain flour

2 teaspoons preparing powder

100 grams (1 container) solidified raspberries

Raspberry buttercream

230 grams (1 container/2 sticks) unsalted margarine, room temperature

1 teaspoon vanilla concentrate

2 tablespoons milk

435 grams (3 and 1/2 containers) icing or powdered sugar, filtered

1/2 container great quality raspberry jam*

New raspberries, to improve

How to Make:

  1. Preheat stove to 180C (360F). Oil and line two 8-inch round cake tins with heating or material paper.
  2. In a medium pot, include margarine, white chocolate, sugar and almond milk. Spot on medium warmth, blending until smooth and sugar has broken down. Put aside for a couple of minutes to cool marginally.
  3. Add eggs and vanilla to cooled white chocolate blend and mix until consolidated. Include flour and heating powder and mix until joined – don't stress if the player is somewhat knotty. Tenderly crease through the raspberries.
  4. Separation the cake player between the two cake tins and spot in the stove for roughly 30-35 minutes or until a stick embedded in the center confesses all. Exchange to a wire rack to cool totally.
  5. To make the raspberry buttercream, add margarine to a huge blending bowl. Beat with an electric blender until light and feathery. Include vanilla and beat once more. Include 1/3 icing sugar and 1 tablespoon of milk and beat until smooth and velvety. Include 1/3 icing sugar and 1 tablespoon of milk and beat once more. At long last, include the rest of the 1/3 icing sugar and beat until smooth. Include raspberry jam and beat until smooth and rich.
  6. Spot one cake layer onto a cake board or stand. Spread the best with raspberry buttercream. Spot second cake layer to finish everything (topsy turvy for a decent level best). Ice the best and sides of cake. Top with crisp raspberries.
