You’ll Need:

1 and 1/2 containers quinoa 

3 containers chicken stock {Or veggie juices for vegan version} 

1 container solidified corn 

15 oz. canned dark beans {drained and rinsed} 

1 container plain Greek Yogurt 

10 oz. can Rotel tomatoes, depleted 

1/2 container salsa 

2 containers Mexican mix cheddar, partitioned 

How to Make:


  1. Wash your quinoa in warm water for around two minutes. 
  2. Warmth an extensive skillet on high and include quinoa. Give cook for 1 moment to let water a chance to dissipate. 
  3. Include the chicken soup and heat to the point of boiling. When it begins bubbling, swing warmth to low and let cook, secured, for 15 minutes. Expel from burner and let stand, still secured, for 5 minutes. 
  4. Preheat stove to 350ºF. 
  5. In a medium bowl, consolidate quinoa, corn, beans, yogurt, tomatoes, salsa, and 1 glass cheddar and blend well. 
  6. Spread into a lubed 9×13 inch container and best with the rest of the cheddar. 
  7. Let prepare, revealed, for 22-25 minutes or until totally warmed through. Appreciate.
