You’ll Need:

2 c
shredded, cooked chicken breast
1 can(s)
chopped green chiles, drained
1/2 c
fresh cilantro, chopped
1 can(s)
black beans, drained
1 pkg
taco seasoning
1 can(s)
fire roasted tomatoes, drained
1-2 c
shredded sharp cheddar cheese

How to Make:

1. Preheat oven to 375.

2. Coat bird breast on every side, lightly, with taco seasoning and bake till completed (approx. half-hour or much less depending on your oven).

3. With a fork or meals processor shred chook and set apart.

4. In a large mixing bowl add all remaining ingredients, including the remaining taco seasoning and mix.

5. Add the shredded chicken breast, mix and set aside.

6. In a small frying pan heat about 1 inch of oil over medium heat.

7. With tongs, take one tortilla and dip it in the hot oil for a few seconds on each side and place on a dry paper towel to absorb excess oil. Repeat until all tortillas have been softened in oil.

8. On another paper towel, lay one tortilla down flat and spread about 2 Tbsp full of chicken mixture across one end of the tortilla and roll gently but as tight as possibly and place seam down on a non-treated baking sheet.
